This Junmai is made from locally developed and grown Yume no Kaori (Dream Incense) sake rice. It produces a sake with well balanced aromatics of ripe melon and basil and a medium dry, full bodied, textural sake with layers of flavour – pear, pomelo, and grapefruit. There is plenty of umami and acid coming through on the palate to create that synchronicity with food. A quaffable Junmai which ticks all the boxes as a diverse all-rounder. Enjoy it chilled alongside rich seafood and grilled meats but equally at home with charcuterie and a cheese platter.
Single pasteurisation in the bottle prior to release from the brewery preserves the fresh, just-brewed sensation on drinking.
