The popular annual Senkin Snowman sake is released by the brewery to kick off the winter season in Japan. The brewery makes this slightly sweet, silky, creamy, cloudy sake as an easy drinking style with an alcohol by volume of 13%. This is the first release which has been made with traditional kimoto starter method which is now Senkin’s favoured production method. To produce this style the sake lees (which are rice and koji remnants) is filtered through mesh bags numerous times to get the ‘just right’ silky, smooth consistency.

The unpasteurised version of this sake can be quite lively with a gentle fizzy feeling on the palate and some gas released on opening. It has the scent of juicy pear and develops a pleasant sour and refreshing note on drinking. Senkin Snowman is an elegant, refined sake with a perception of richness that allows it to pair well with strongly flavoured dishes or be enjoyed as an aperitif to refresh the palate. The bottle cap has a small perforated membrane in it to allow for excess gas release during transport. Care should be taken on opening this sake and the sake should always be placed in refrigeration, before and after opening.
