As the name of this sake suggests, Senkin Retro has a distinct “looking back” vibe with the bottled sake bearing a label in striking colours and design which replicates a label found in the brewery’s own historical records. Retro is produced from Omachi rice, the oldest, pure ancestral sake rice grain, which was discovered in 1859, in the last decade of the Edo period. To complete the retro perspective of this sake it is prepared with traditional kimoto starter technique, helping to build good acidity in the sake. There is a distinct impression of both sweet and sour flavours in this sake such as green grape and mandarin rind, connected by almond milk and steamed chestnut notes.
As with other Senkin sake varieties the first release from the brewery will be the unpasteurised or Namazake followed by a single pasteurised version (known as Hiire) which will have had a short period of maturation in brewery storage giving a smoother, integrated sake. Both versions should be kept in cold storage (refrigerated) and be served chilled.
