Senkin Nature has evolved to be the ‘ultra-natural flagship’ sake for this brewery, embracing a methodology which champions traditional brewing systems, minimal intervention, organic farming, additive free brewing and natural spontaneous fermentation practices. It comfortably sits within the new pared down collection of the Senkin Edo-Gaeri range released in November 2024.
Senkin Nature is brewed in large wooden Cedar Kioke tanks and is made from Kame no O rice grain which has been minimally polished to remove only the outer husk, a polishing ratio of 90%. Kame no O is an ancestral grain which is a table or eating rice and does not breakdown easily during sake fermentation. For this reason, the traditional Kimoto starter method is used where brewery workers manually mash the rice to aid the growth of the correct microorganisms. Over time the developing sake is fermented by ambient yeast within the brewery and this process can take more than 40 days to get underway. The sake that results has rich complexity with layers of muscat grape, ripe papaya, marmalade, grapefruit, toasted granola and sour cream wrapped up with peppery acidity and a savoury umami finish. This medium-bodied, multidimensional sake has a great mouth feel and velvety texture and at 14% ABV is very approachable for drinkers. Changing the service temperature will open up more possibilities for this sake and is encouraged.
