Senkin Classic celebrates the heirloom ancestral rice Kame no O, fermented with traditional Kimoto starter technique and naturally occurring yeast living within the brewery. This sake is a true example of a minimal intervention brewing with no additives, and it is bottled immediately after filtering. The first release from the winter brewing season is unpasteurised or namazake and it is fresh, zesty, and lively with some light cloudiness due to a small amount of retained fragments of rice and koji. The single pasteurisation sake is released after a short period of maturation in the brewery and is a more mellow version of the vibrant Namazake.
The sake has green kiwifruit and feijoa flavours with a base note of coconut water and bright lemon peel/pithy acidity. It has a light, lifted body and is a great introduction to natural sake with a lower alcohol content. Recommended to serve chilled down to enjoy the brightness contained in this sake.
