This COLA craft sake is made in collaboration with Abe Sake Brewery based in Niigata who produces a unique cola syrup made from koji amazake and local plants and spices. Librom uses the lees (left over remnants of rice koji) from this Kuracola syrup to add to their own Cola craft sake during fermentation to make a more ‘adult’ alcoholic version.
The master brewer of Librom spent a few years in training with the team at Abe Sake Brewery and there is a shared feeling about sake and fermentation which unites them. Cola Craft Sake is lively and unpasteurised so care must be taken on opening to release retained fermentation gases slowly, in a controlled way. It has delicious sweet and zippy feeling on the palate from the distinctive blend of spices which create the flavour base
of COLA.
