This sake was made using Hattan Nishiki rice and a natural fermentation technique relying on the formation of lactic acid bacteria to protect the fermenting sake yeast. After pressing it had 10 months of maturation at minus 5°C in the brewery to develop the flavour profile prior to a single pasteurisation and release.

It has soft, gentle aromas of apple and green grape with a mellow umami and white peach-like fruity sweetness on the palate. Signature clear acidity is layered through this sake and adds to the refreshing feeling on drinking. After opening the palate will develop further richness and the brewers recommend appreciating this sake over several days to enjoy the flavour development.
