Anastasia Green is a fresh, juicy, unpasteurised sake made from locally grown Saga no Hana rice. It has an attractive fruit dominant, sweet-sour profile with green grape, white peach and green melon flavours laced with just picked basil, tarragon and pandan leaf top notes. A pleasing sour mandarin finish adds a firm full stop to the drink and has you reaching for a repeat taste which is encouraged with an easy drinking, low level ABV of 13%.

This sake is captured in the bottle in an unpasteurised (nama) state and can be zesty on opening with gentle fine bubbles from fermentation lifting the in-mouth experience. Care on opening is required and the sake should be kept in refrigeration at all times. After opening the sake will mellow over a few days and develop some delicious deeper character.

This sake is called Anastasia Green which is the given name for a vibrant form of green chrysanthemum flower which is depicted on the bottle’s back label. The brewery continues to explore the Chrysanthemum motif, which is Japan’s National flower, in its own name and symbols that appear on the bottle. Additionally, there is the connection that ‘Anastasia’ is derived from a Greek word meaning “resurrected woman” which reinforces the new brewing life that has been created at Koueigiku brewery.
