In the Kokuryu range this is known as ‘the ultimate sake’, a special, limited edition Junmai Daiginjo made from rice of the highest quality from Tojo, Hyogo Prefecture. The sake is fermented very slowly at cold temperatures to extract a delicious, refined taste with a full-bodied flavour.
It has complex aromas of juicy white peach and ripe pear, with hints of chamomile tea and elderflower. These elements plus sweetness, acidity, umami and bitterness are balanced on the palate combining to form a rich, concentrated flavour, which still retains lightness and elegance. The silky texture demonstrates the high quality of this sake. It is a seamless luxury sake with a surprisingly long finish.
