The first Awa sparkling sake to be released under the Kokuryu brand. This is a limited edition, rare sake developed exclusively for restaurants, selected by the brewery, to showcase Kokuryu sake. Kokuryu is a member of the Japan AWA Sake association which upholds the skills and strict criteria for premium sparkling sake styles and because of this they are permitted to use the labelling term ‘Awa’ (which is a Japanese word meaning ‘bubble’).
This sparkling has a beautiful fine mousse crafted by secondary in-bottle fermentation like a Champagne style. It is a refined, delicate and light-bodied sparkling sake which has developed during 15 months of ageing in zero degree storage. It sweeps across the palate with a delicate fruity backbone and sweet/sour tones finishing in the medium dry zone. It is packaged under cork, in a premium black bottle with a striking woven cloth label echoing Kokuryu’s Fukui roots. Serve chilled down in thin rimmed glassware. Store refrigerated.
