Hailing from the Ibaraki Prefecture in the Kanto region of Honshu Japan, this Sakè uses the finest Yamada Nishiki Sakè rice along with pure spring water from the nearby Tsukuba Mountains and is brewed with techniques that have been refined over 300 years. With a rice-like aroma that offers a hint of bamboo, this Tokubetsu Junmai has a light, dry taste that builds up to a slightly tart punch with a lingering, peppery finish. The smooth, silky texture, coupled with the rich, spicy and earthy flavour is belied by the initial lightness, making it a good example of the diversity in sakè and one that pairs well with most savoury foods.
