This is a sake brewed using a combination of locally grown Gin no Sei (for Koji rice) and Akita Sake Komachi rice (for the kake rice component). The polishing ratio is in the Ginjo zone being less than 60% and the sake presents with definite fruity aromas and subtle fresh stone fruit, baked apple and pear tastes on the front palate. In the mouth the sake broadens with steamed mochi rice cake flavours, umami and acidity with a smooth, creamy texture and moderately short crisp finish. This is an all rounder sake, flexible with food and easy to pair with a wide variety of protein based dishes. A great way to introduce people to sake, approachable, delicious and a crowd pleaser.
