This sake is brewed using the underground Kamishirasawa water source, fed by natural springs arising from the Northern Alps. With the cooperation of AW Water company this crystal clear water is drawn from a 200 metre deep well and is used for brewing. The more mineral rich style of this water source paves the way for a sake that has a fuller, dryer profile. This sake is made with Omachi rice grown in Okayama Prefecture and has rich flavours of golden apple, nashi pear and prince melon with a distinctive orange pith edge of pleasant bitterness and apple skin acidity as a refreshing end note. The aromas are soft and muted, and this sake shows flexibility in serving temperature either cold, room temperature and gently warm for a fuller expression, with great food compatibility, which are the hallmarks of the Ryusuisen brand.
