This Tokubetsu Junmai Nigori or cloudy sake has moderate white creamy lees retained in the bottle and is a dryer style, designed to let you enjoy the umami flavour and the aromas of steamed rice. It is richly textured and has some initial fruity sweetness which develops into more rice dominant flavours. It is placed into bottle immediately after passing through a coarse mesh filter and it will be quite lively as some bubbly fermentation gas will also be trapped in the bottle.
It should be kept refrigerated at all times during storage, and after opening, as it is an unpasteurised or Namazake. Care should be taken on removing the bottle cap gently, in a controlled manner to allow the escape of any gas. A speciality sake and great example of its kind for lovers of cloudy sake. Highly recommended to pair with spicy, full flavoured foods.
