This product was born of a crowd funding exercise by a Catraccia Coffee Roastery in Japan who wanted to support struggling Honduran Coffee Farmers during and after the covid pandemic. The coffee beans being produced were high quality but due to poor investment they were trapped in low quality trade conditions and relative poverty. Tada san got to know the Catraccia owner after advising them on roasting technique for their beans and between them the idea of a coffee shochu was created. This project enabled the profile of these fragrant, delicious coffee beans to be elevated.
The coffee is extracted by a cold brew method with a water dripper and combined with the authentic barley shochu made with a lactic acid fermented mash. The addition of a local Chikuzen organically grown sugar cane molasses provides a touch of sweetness to this liqueur.
