Aizu Miyaizumi is the original brand for Miyaizumi Meijo Sake Brewery that was made for distribution locally in Fukushima. Hatsushibori means “first press” in Japanese and this is a very limited run of bottles from the beginning of each season’s sake making. Care should be taken on opening the bottle and removing the cap as there can be some natural pressure of fermentation gas in the bottle. Keep refrigerated at all times.

This first release sake from the brewery, bottled when freshly pressed, captures the liveliness and vitality of this Junmai. This version of the sake is a cloudy, ‘nigorizake’ with some bubbly, zesty sensation on the tongue from retained carbon dioxide. The sake has fruity flavours of ripe banana, green melon and juicy peach overlaid with a creamy, rice flavour with acidity very evident. The sake is fresh and bold with a dry taste on immediate opening which mellows to a gentle fruity sweetness after a few days. We recommend storing the sake in the fridge and revisit for changing taste experiences.
