This Junmai sake has soft, enticing aromas of honey, steamed rice, and freshly toasted granola. On the palate the sake is immediately impactful with flavours of butterscotch and salted caramel merging with savoury umami and an off dry long finish. This sake is made with a locally grown table rice called Reihou and Brewing Society yeast No 9 and feels “just right” alongside more substantial flavours which may lean toward the salty or spicy spectrum. It has considerable flexibility as you can serve it cool, room temperature or warmed to around 40 degrees.
