Brewed with Bizen Omachi rice in the traditional Yamahai method, this sake utilises naturally occurring lactic acids which give an added complexity and richness to the flavours. It has been aged for one and half years prior to release from the brewery to allow good concentration and integration of the flavours.
It is a medium bodied sake with rice and umami dominant flavours that spread slowly over the tongue. It has a medium-dry palate with balancing acidity and a touch of astringency on the finish. The savoury tastes work well with many foods which gives it great flexibility alongside both meat and vegetable dishes. It has been pasteurised once only to retain freshness.
