This was the foundation sake for Koueigiku as it was the very first release from the brewery when it started production in 2019. The entire lot was sold out within six weeks and the brewery has continued to produce batches of this firm favourite which speaks to their unique minimal intervention and natural brewing viewpoint.
This sake is made from Yamadanishiki or Saga Biyori rice and has a vibrant juicy profile speaking to the drinker of fresh fruit and steamed rice. Think juicy nashi pear, creamy fresh banana, succulent white peach, hints of mango overlaid with a misty veil of steamed rice and bright finishing acidity. Quite often there will be a zippy, lively, almost imperceptible bubble that brightens the palate.
This is an entirely new concept of sake created by Master Brewer / Toji Katsuaki Yamamoto using techniques that rely entirely on the creation of sake fundamentals without the contribution of chemicals and processes that will modify flavour. He uses naturally occurring lactic acid bacteria to create an environment in which yeast can ferment optimally and produce these delicious fresh brews that are captured with passion in the bottle. All sake are unpasteurised, unfined and undiluted meaning they are delivered to you straight from the fermentation tank. Please respect the opening of the bottle by applying a finger to the pressure cap to ensure a release of the contained fermentation spritz in a controlled manner. Unpasteurised and requires refrigeration at all times – storage and after opening.
