This is the single pasteurised version of a Junmai sake made with Omachi rice from the Bizen area of Okayama. It shows all the hallmarks of the rice being a rich flavoured, medium-dry sake with some gentle fruit character before developing a refreshing umami and finishing with some sharpness and citrus notes. It can be enjoyed at many different temperatures and this flexibility and the way its flavour profile merges with food has made it a firm favourite with the locals in Okayama and neighbouring Hiroshima. Takaji is a brand with very limited distribution in Japan and is usually found only in local jizake stores.
