This sake is made taking advantage of the cold climate brewing temperatures of the Hita basin in central Kyushu, and the underground pure and natural water source arising from Mount Hiko. Yamadanishiki rice is polished to 55% of its original grain size and carefully fermented at very low temperatures to produce an elegant light bodied mellow sake that is refreshing and pairs well with seafood and vegetable dishes. The sake has a delicious fruity aroma or Ginjo-ka which adds some highlight notes to the flavour profile.
