Rich aromas of ripe peaches and tropical flower incense with juicy fruit forward flavours and a smooth, mouth-coating texture. This is balanced by an umami backbone with clean white-pepper acidity on the finish. There is an intensity in the palate with a barely restrained energy which is associated with the kimoto fermentation starter style.
This limited season sake is made from Omachi rice grown in the Bizen area of Okayama prefecture which is one of the key regions for producing high quality grains of this heritage rice. This sake is a spin-off from the ever-popular Junmai Kimoto Bizen Omachi showing another way in which the “taste” of the rice can be brought out by sake fermentation.
