Sake Mirai was developed about 18 years ago by Takagi Brewery in Yamagata (the producers of the brand Juyondai) and is attracting attention as a rare but popular rice for brewing. It is a cross bred rice between Yamada Nishiki and Miyama Nishiki which are two of the most famous and commonly used sake rices. It was named Sake Mirai or Future (when translated to English) in the hope that this rice would take sake to a whole new level of development and that future brewers will shine through friendly rivalry when brewing with it.
For this limited edition brewing project Kobayashi Sake Brewery decided to use this rice to make a Junmai Daiginjo using the traditional Kimoto starter technique. The result is a sake with a refreshing ginjo incense, reminiscent of natural greenery with a juicy, creamy texture and some citrus accents. It has been pasteurised once and should be stored and kept in the refrigerator.
