This is a limited small production sparkling sake which achieved the highest award at the International Wine Challenge Sake Competition 2023 with a trophy in the Sparkling Sake category. It is a delicious misty sake with a delicate and refreshing creamy foam which whispers fruity white peach, nashi pear and green grape with a bright citrus note. In the style of a Pet-Nat it is made from a local Noto table rice with a secondary in-bottle fermentation technique.
This production is unpasteurised (namazake) and care should be taken to release the cap closure slowly. Refrigerate during storage and after opening.
