Brewed in the most traditional Kimoto method, this Chikuha Kimoto Junmai Okunoto is created using pure spring water, Noto Gohyakumangoku rice and a very special kind of yeast extracted from Noto seaweed. The result is a gentle sweetness of bananas and cashew on the palate, balanced by an aroma of rich pudding and custard with a bekko candy base. When taken chilled, it offers a light acidity and a rich flavour. The longer it is open, however, the sweeter it becomes. This makes it a sake that can be enjoyed over the passage of several days. Extremely versatile, this Junmai brings out the delicate sweetness of the ingredients in a dish and goes well with Japanese roasted vegetables and white fish with kelp. It also pairs easily with western food, nicely complementing the scent of butter and saffron, and it has a long-lasting umami finish, which means one can take their time to enjoy it with rich cheese and dried fruits.
