This sake is made with Shinriki rice which is known as the “Phantom rice”. This is because it’s a heritage table rice that almost became extinct and was fortunately resurrected in recent years by committed farmers and brewers who respected its taste profile and how it behaved in sake brewing. In Miyagi prefecture the brewery contracts farmers to grow the Shinriki crop without pesticides and only with organic fertilisers to preserve the unique and flavoursome components of the rice.

For this delicious sake, the Shinriki rice has been polished quite highly to reduce the amino acid components in the main fermentation. What results is a sake with the aromas of green muscat grape, kiwi fruit and cumquat with a distinct grassy note. This sake may resonate with Riesling and Sav Blanc drinkers due to the palpable minerality and green/golden kiwi flavour notes that round out this medium dry sake with a precise, crisp finish. Highly recommend pouring this to sake newbies who are exploring the category.
