This sake has been made using a locally developed Miyagi table rice variety called Sasanishiki. This rice is a particular favourite of Onuma Sake brewery, and the rice grain has a firmer texture compared to other rice types used for making sake, which leads to a cleaner, drier sake with more savoury flavour notes. Sasanishiki rice is often used for sushi rice as it has the unique ability to maintain its flavour consistency through different temperatures from hot-to-warm-to-room temperature. It might be interesting to drink a sake made from Sasanishiki rice alongside sushi made with the same rice.
Aromatically this sake has soft peach and nectarine notes which leads to a smooth, white stone fruit palate with a grassy, clean acidic finish and emerging umami. This is a sake for those enjoying a walk on the drier side with assured quaffability. Great to pair with sushi made from fattier, richer styles of fish.
