Defined as a specialty sake, Kijoshu is created by adding sake instead of water in the final stage of brewing, which results in a sweeter, more full-flavoured sake. Mutsu Hassen Kijoshu lives up to expectations from the moment the bottle is opened as the fragrance of Crème Brûlée and Crème Caramel hits the senses, along with a hint of poached fruit. When consumed chilled, a zestiness becomes evident with hints of lemon, grapefruit, apple and apricot, while at room temperature, the acidity emerges, likening the flavour to that of a wine. This Kijoshu is an ideal complement for fruit and cheese plates, shellfish meals and citrus based dishes.
