Kuzuryu Daiginjo has been specifically designed to complement but not overpower the flavour of the dishes. It is smooth, svelte, with a satisfying traditional taste of sake that has the grace that comes from careful maturing. This sake is made with locally grown Gohyakumangoku rice, and each rice grain has been polished to 50% of its original size. The extra refinement that comes from this polishing helps to create the sophisticated complexity of the light aromas that emerge on pouring from the bottle.

It has a delicate and light taste with fruit-like aromas and nutty, herbal, almost botanical notes, which is distinct in Daiginjo, making this sake a rare find. It is medium bodied and perfectly balanced in its structure. This is a rather unique Daiginjo as the brewery recommends drinking it gently warmed to around 43°C. It is a unique trait for a highly polished sake to be warmed but it does have considerable flexibility being enjoyed across a wide temperature range.

The beautiful black velvet bottle label embroidered with the Kanji characters for Kuzuryu – nine-headed dragon is very impactful and memorable. The Kuzuryu range of sake is the second brand produced by Kokuryu Sake Brewery and it was formerly only available in Japan, in recent times it has been available for export internationally. The Kuzuryu range of sake were developed to be served warm with the local cuisine and the brewery is a firm advocate for ‘kan tanoshi’ literally meaning enjoying warm sake.
