This is a very special limited release Junmai Daiginjo ‘Nizaemon’ is named after Kokuryu’s founder, Nizaemon Ishidaya. This sake is very much a liquid object of desire and is made using the exacting Tobin-Dori technique where every precious drop of fermenting liquid is captured from the filtering process in large 18 litre glass bottles (‘tobin’). These bottles are then matured below zero degrees for one year before being bottled in the distinctively shaped glass bottles with hand-crafted Nizaemon kanji labels applied.
The result of this period of ageing and detailed production process is a stunning sake with a soft, rounded, rich and elegant flavour and aroma profile. Demand for Nizaemon and Ishidaya is huge but there is just one annual release of these flagship sake with allocation and ballot systems controlled by the brewery.
