Understanding the importance of pure ingredients, Crystal Dragon uses domestically grown Gohyakumangoku rice fermented in a gradual, low-temperature process. Combined with Kokuryu’s proprietary yeast and the pure subterranean soft water of the Kuzuryu River, this Daiginjo picks up subtle flavour nuances not normally found in Saké made with mineral-rich hard water. The result is a multi-layered complexity that gives this Daiginjo its strength, depth of flavour and incredible balance. With its resolute taste and clean balance, this Saké is an ideal complement to umami-rich seafood like squid, scallops and sea bream.
