A limited edition sake which is an unpasteurised version of the semi-sweet Lei Junmai Ginjo which is part of the brewery’s regular line up. It is released once a year, fresh from production, to show energy and intensity with flavours of sweet musk melon which fills the mouth with its plump, velvety texture. There is a whisper of retained rice lees in the sake which imparts a soft creamy, cloudiness in the glass which enhances its appeal. 

This sake was designed to be in the semi-sweet to sweet zone and works well with some food groups which are strikingly opposite – examples of this would be the stunning pairing  relationship of Lei with strongly flavoured Roquefort blue cheese or a salty Parma ham. It also works incredibly well with Chinese food showing pronounced spiciness or strong umami (e.g., dishes prepared with fermented shrimp or tofu paste). As with all unpasteurised sake it should be kept refrigerated to preserve condition during storage and after opening.
