This nama or unpasteurised version of the Katsuyama En Tokubetsu Junmai shows a different side to this flavour-merge sake. The unpasteurised sake has not received any heat stabilisation during production and has been released in a just-filtered style. This means the emphasis is on freshness and vitality, and it definitely appeals with a more uplifted feel in the glass. This sake works really well paired alongside a number of savoury proteins e.g., chicken, fish, lamb or beef and it really is a bit of an all-rounder, showing great flexibility with food. There is fruitiness on the opening and then the satisfying depth of umami emerges on the palate.
