This Junmai is made with the abundant local spring water in the cold climate brewing season extending from autumn to spring in the Hita basin where the brewery is located. The sake has an appealing malty grain scented nose with pleasant earthiness and soya sauce notes which follows onto a dry, savoury taste with a textured palate, mild acidity and gentle finish. This sake can be warmed to show a different expression of flavours and bring through some rice sweetness and more acidity.
