The premium Hello Koueigiku range focuses on sake made using rice varietals that have been polished to a greater extent to accentuate juicy sweetness and bright acidity in the finished product. Embracing the challenges of brewing with highly soluble Aiyama sake rice this lightly cloudy, unpasteurised, low ABV, lively sake is full of gentle fruity sweetness of white grapes, nectarine and fresh apricot with tart green apple emerging to create a refreshing finish. Due to the presence of some rice lees in the sake there is a smooth and creamy texture to this sake. A great balance of sweet and sour elements which is the hallmark of Koueigiku’s approach to sake brewing.
Care should be taken on opening this sake with a thumb placed on the pressure cap to allow release of fermentation spritz in a controlled way. As this sake is unpasteurised (nama) it should be kept refrigerated during storage and after opening.
