This is a sake which is popular with sushi chefs on the Noto peninsula in Japan. It was created to show some Ginjo-like character and be smooth and light with a crispness to pair well with richer, fatty fish dishes. This Daiginjo has gentle melon aromatics and then opens on the palate with a distinct body and clarity showing soft fruitiness and some rice notes. There is a crisp finish which adds an herbal, green pepper freshness to the finish. Drink cold in the 5-10°C zone and enjoy in a thin-walled, tulip-shaped glass to maximise the appreciation of its silky texture.
