This is one of the limited-edition sake series produced by Kokuryu Sake Brewery. It is released twice a year on strict allocation terms. This Daiginjo is crafted from high grade Yamadanishiki rice, grown in the premium rice fields of Tojo in Hyogo Prefecture, polished to 35% of its original grain size.
The name given to this sake “Shizuku” refers to the method of extracting the finished sake from the fermentation process. The sake is filtered in cloth bags which are suspended to allow the natural power of gravity to illicit clear sake ‘drop by drop’ to fill large glass bottles. This time consuming and labour-intensive technique minimises pressure being applied to the fermentation mash or moromi resulting in a very clean, pristine and smooth sake which can only be made in small quantities.
Kokuryu Shizuku Daiginjo is an elegant, sophisticated drop with gentle aromas of pear and white blossom, a silky textured medium body shows great balance of sweetness and minerality. The sake finishes in the dry zone making it an ideal sake to enjoy with a meal. The distinctive and impressive hand drawn label spells out Shizuku in Japanese Hiragana しずく.
