This historically significant rice strain, which was developed in Omagari, Akita in 1913 and more widely cultivated from around 1921, was crucial for its resistance to the cold-weather damage that afflicted rice cultivation in the Tōhoku region.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eWhat makes this expression even more special is that the Riku-u rice is grown in Aramasa Shuzō’s own fields in Uyashinai – a scenic area known as a “village of pesticide-free sake rice.” It is a sake shaped not only by heritage, but by a specific place and the hands that cultivate it.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eThe Japanese name of the sake, Nōmin Geijutsu Gairon (An Introduction to the Farmer’s Art), is taken from a manuscript by Kenji Miyazawa, a Japanese novelist, and agricultural science teacher who devoted himself to the use of natural fertilisers and to promoting Riku-u rice. In the mid-palate, the flavour becomes more concentrated and complex, revealing layers of bitterness and astringency shaped by the influence of kioke, which unfold gradually and linger into a long finish.
