Literally translating to duty and chivalry, it is a direct reflection of Yamachu Honke Shuzo’s brewing philosophy: returning the full power of the rice to the sake, and showing utmost respect to the farmers who grow their rice.\u003c\/span\u003e\u003cb\u003e\u003c\/b\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eGikyo places craftsmanship and their relationship between brewer and farmer at the heart of its sake. They are one of a few elite breweries with exclusive access to Yamada Nishiki rice grown in the legendary Tojo Area Special A Zone of Hyogo Prefecture, widely considered as the best of the best terroir for sake rice. To ensure quality and freshness, all rice is milled completely in house. Gikyo’s sakes are brewed using pristine underground water from Mt Ontake drawn from 250 metres below the brewery. Adhering to tradition, the brewing process continues to rely heavily on human judgement derived from centuries of experience. Yet they’re unafraid of challenging conventions, being prominent pioneers in ageing premium sake.
