The forest here is more than just a setting. Niseko’s mountainous climate provides natural cooling for throughout the brewing process. Using only locally grown Nanatsuboshi table rice from Rankoshi, rather than traditional sake-specific rice varieties, and underground spring water from Niseko mountain range, the same water that grew the rice, the sakes pay homage to the land. There’s minimal human intervention in the production process, with fermentation in wooden vats (kioke) marking respect and adherence to traditional sake-making methods.
